Granola

When I need a late night snack or just a good breakfast Stoneyfield French Vanilla Yogurt and homemade granola hit the spot. I thought I would share my recipe.


4 cups old-fashioned oats
2 cups sliced almonds
3/4 cup vegetable oil
1/2 cups honey
1 cup dried cranberries
*sometimes I add pecans and sweetened coconut

Preheat the oven to 350 degrees F.
Toss the oats and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. I line a 13X18 by 1 inch sheet pan with parchment paper and then pour the mixture on the sheet. Bake, stirring occasionally with a spatula, until the mixture turns a nice golden brown. It takes 30-45 minutes.
Remove the granola from the oven. I usually let it sit for about 20 minutes, then break it up and put it into an airtight container. Some like to eat it plain, some like it on ice cream, and some eat with yogurt. Enjoy!






The Best Oatmeal Raisin Cookies

I have been looking for a good Oatmeal Raisin Cookie recipe for a while and my mother came across this one.  I figure many of you may not have time to experiment with different recipes so take this and use it! It is Dole's Recipe. You will be pleased!

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup butter or margarine, softened
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1-3/4 cups old-fashioned rolled oats
  • 1 package (8 oz.) DOLE® Seedless Raisins

Directions

  1. Combine flour, baking soda, cinnamon, nutmeg and salt in medium bowl; set aside.
  2. Beat together butter and sugars in large bowl until creamy. Beat in eggs and vanilla until blended. Beat in flour mixture until just blended. Stir in oats and raisins.
  3. Drop by tablespoonfuls onto ungreased baking sheets, 2 inches apart.
  4. Bake at 375ΓΈF ., 6-7 minutes or until lightly browned. Remove to wire racks to cool completely.
